SLA builds its menu around raw and cooked vegetables: salads, grain bowls, warm bowls, and pitas, each anchored in plant-based proteins like tempeh, chickpeas, and edamame. Vegan options account for roughly three-quarters of the menu and are clearly marked with a plant symbol. Chicken and salmon feature in a small number of dishes for those who prefer animal protein.

The kitchen works with daily fresh, predominantly organic produce and avoids refined sugar and artificial additives across its preparations. Vegetables are roasted, steamed, and peeled rather than deep-fried, and cold-pressed juices by Sapje are blended from at least 70% organic vegetables with no added water.

Seasonal rotation shapes the offering, with ingredient combinations refreshed to follow Dutch growing cycles.
